Club Sandwich Salad (Gluten Free)

Sometimes I have those moods where I want a sandwich, but I kinda want a salad too, but I don’t really want both, but I sorta do. It can pose quite the conundrum.

Sandwiches are actually kinda scarce in these parts, since I don’t particularly care for bread and Mama CC can’t eat normal bread. Gluten free bread kinda, sorta, really sucks. The best we have found has been from Trader Joe’s! It’s their own brand and they have two varieties, multigrain and white. The multigrain is pretty awesome, but not awesome enough to want to have a whole sandwich on it. Enter the Club Sandwich Salad! Sandwich. Salad. Best of both worlds altogether. It’s great.

Gluten Free Club Sandwich Salad (adapted from this Serious Eats recipe) for 2

  • 4 thin slices smoked bacon, cooked and crispy
  • 2 firm ripe heirloom tomatoes, cored and chopped
  • 1/2 head romaine lettuce, chopped (3 cups)
  • 4 scallions, chopped
  • Creamy Lemon-Mustard Dressing (recipe follows)
  • 2 thin slices of bread, toasted (I used Trader Joe’s GF Multigrain Bread)
  • 2 grilled Chicken Breasts, cut lengthwise into thin slices
Crumble bacon. Combine tomatoes, lettuce and scallions together, add dressing and toss together. Spread a little of the dressing on toasted bread and place on bottom of serving plate. Top with dressed lettuce. Top with sliced chicken breast and crumbled bacon. Serve and enjoy!

Creamy Lemon-Mustard Dressing (you’ll have a lot left over, which is a great thing)

  • 3 tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon imported French mustard
  • 1 tablespoon high quality mayonnaise
  • 1 tablespoon extra virgin olive oil
Place all ingredients together in a jar or container and shake together until blended.

  1. This is a great idea! I just started a gluten free diet and I really miss sandwiches. Turning them into salads is awesome. Thanks for sharing such a great eat.
