Super Easy Side Dishes: Garlicky Carrots, Boursin Mashed Potatoes & Sauteed Green Beans with Onions

Yesterday, I shared a really simple roasted chicken recipe and I made some super easy sides to complete the meal. Garlicky carrots, Boursin mashed potatoes and sautéed green beans. All together the side dishes took about 20 minutes to prepare start to finish. Definitely one of the easiest, and tastiest, meals I’ve ever made. Garlicky Carrots

  • 3 large carrots, sliced (I recommend a mandoline)
  • 5 cloves garlic
  • 2 tablespoons butter
  • black pepper
  1. Slice carrots. I would recommend using a mandoline so you get a uniform thickness. Add carrots to a large saucepan and about 2 cups of water (enough to cover) and bring to a boil over high heat. Cook until carrots are almost fork tender. Drain water and dry out saucepan.
  2. Melt butter over medium high heat. Mince garlic into a pan and sauté. When garlic is just starting to turn golden brown, add carrots back to the pan. Stir to coat.
  3. Continue cooking until carrots are tender and garlic is crispy. Remove from heat and place in serving dish. Top with black pepper.
  4. Serve and enjoy!
Boursin Mashed Potatoes
  • 1 package of Boursin
  • Potatoes, peeled
  1. Peel potatoes. Cut into smaller pieces if potatoes are large or thick. Boil potatoes in a medium sized pot of salted water. Continue cooking until potatoes are fork tender. Drain potatoes when done.
  2. Put the potatoes in a large mixing bowl with package of Boursin. Blend together with a hand mixer until potatoes are smooth.
  3. Serve and enjoy!
Sautéed Green Beans with Red Onions
  • 1/2 pound green beans, trimmed
  • 1/2 red onion, diced
  • extra virgin olive oil
  1. In a medium pan, heat olive oil over medium-high heat. Add diced red onion once oil is heated. Continue cooking onions while preparing green beans. Let the onions start to caramelize a bit.
  2. In a medium pot, bring salted water and green beans to a boil. Once boiling, continue to cook until green bean are tender, about 4-5 minutes. Drain beans.
  3. Add green beans to pan with onions. Stir to mix. Continue sautéing green beans and onions and continue cooking until green beans are heated through.
